Quick & Easy Meals on the Road

Some days, like after a long day on the road a hike up the mountain, or you are running late getting to your campsite, you just want something quick and easy to make for dinner. This is also where leftovers come in real handy. Here are a few recipes that require very little prep and will make a delicious and satisfying meal.

Tuna and Pasta

Cook up some pasta on your campstove. Toss in a can or two of light tuna in oil, a couple of large dollops of pesto from a jar, and some grated cheese.

            Other things you could add:

Oil-cure olives or a dollop of Olive Tapenade

Diced avocado

Capers

Spinach

Fresh herbs

Clam Pasta

Cook up some pasta on your campstove. Warm some olive oil (at least, 4-6 tablespoons) or some plain or garlic scape ghee in a sauté pan, add lots of minced garlic and heat on very low heat. You don’t want the garlic to brown, just flavor the oil/ghee.  Just before your pasta is done, add 1 or 2 cans of canned clams, drained. Save the liquor from the clams in case you need more liquid in your sauce. When the clams are warmed, toss with the drained pasta and serve with grated cheese on the side. You could toss some spinach in to wilt if you want or maybe a splash of Parmesan Dipping Sauce.

Potato Fry-up

In a cast iron sauté pan, heat up some olive oil; add some onions, garlic if you wish, and cook until the onions are cook through and soft (about 15 minutes). Add some leftover potatoes, cubed and cook for 10-15 minutes until browned; add any leftover veggies that you have. Grate some cheddar cheese or Monterey jack cheese over it. When the cheese is melted, serve. You can also serve it with a fried egg on top or any chopped meat you have leftover in your cooler. Don’t forget the hot sauce.

Eggs & Sandwiches & More Pasta

There’s always an omelet or fried egg sandwich, don’t forget the hot sauce.; a grilled cheese sandwich or a tuna melt (try dipping the sandwich in beaten egg before you grill it in the pan – like French toast); ham and cheese quesadilla; or pasta with Moroccan Tomato Onion Relish and some ground lamb or beef, Sun-Dried Tomato Pesto, or marinara straight from the jar.

Black Beans and Corn

A quick and delicious side; nothing too original, but great to have camping.

1 (15 ounce) can black beans, drained

1 (15.2) ounce can whole-kernel corn (hopefully GMO-free), drained, reserve liquid

¼ - ½ cup salsa or a commercial, fresh salsa, drained

¼ cup fresh cilantro, chopped (you can use the stems, too, if you wish)

Mix all ingredients and serve with tortillas or chips or with a fried egg on top.

French Toast or Pancakes

Easy, filling, and you have an excuse to have some maple syrup!
