Recipe|CHERRY CHAI APPLE PIE

BRINS cherry chai apple pie

(Cherry Chai)

 

Filling: 

1 jar Cherry Chai jam 

3tbs brown sugar

3tbs sugar

1/2 tsp cinnamon 

1/8 tsp nutmeg 

pinch salt

6 medium apples (Macintosh) 

1 tbs lemon juice 

1tbs cornstarch 

2 tbs unsalted butter (cubed) 

 

 

 

Dough: 

2 1/4c flour

1tsp salt

2 tsp sugar

6tbs unsalted butter (chilled, cubed)

6tbs frozen shortening (cubed)

6-8tbs ice cold water 

 

Make Dough: 

sift together the flour, sugar and salt

*cut in the butter and shortening with your hands or with a pastry cutter until the mixture looks like pea sized crumble (at the Pantry we like to use all butter and mix the dough in a food processor)

*pour in 6tbs water, mix with wooden spoon. add more water if needed to form a ball but you don't want it to be too wet, just not crumbly

*form dough into two balls, cover in plastic and chill in frig for at least 30 -45 minutes

 

Make Filling: 

* Peel and dice apples. Place in a large mixing bowl with lemon juice. 

* Add in Cherry Chai jam 

* Stir in all remaining ingredients except the cubed butter

 

Assemble & Bake: 

*Preheat oven to 425

* make an egg wash by beating 1egg with 1 tbs water, set aside

* Roll out both balls of dough into 12-14" rounds

* Place one round in pie pan 

* pour prepared filling onto dough lined pan. Add cubed butter 

* top with 2nd dough round, crump edges as desired, slice 4-5 venting holes and brush evenly with egg wash 

* Bake for 15 minutes then turn heat down to 375 and bake for 45 minutes longer 

* remove from oven and allow to cool for min. of 4 hours before serving
