Recipe|SPICY SWEET POPCORN
1/4 cup popcorn kernels, unpopped
1tbs coconut oil
1 jar BRINS Chili Pepper
1 cup sugar
1/8 tsp baking soda
Pop kernels with 1tbs of coconut oil, set aside
Preheat oven to 250 degrees F and line a baking sheet with parchment paper. Set aside.
In medium saucepan over medium-high heat, melt butter, then mix in chili pepper jam and sugar. Allow to come to a boil, then reduce heat and simmer until color darkens and mixture thickens---about 15 minutes.
Remove from heat, add baking soda and stir. Immediately pour over heat-safe bowl of popped popcorn, toss to coat. Spread coated popcorn onto baking sheet and bake in oven to set caramel for 20 minutes, stirring and turning the caramel corn halfway between. Remove from oven, break up chunks and enjoy!!
Store in an air-tight container for up to 1 week.
